What made you want to become a chef?
I initially wanted to be an hotelier and so, joined the Oberoi School of Hotel Management. It was there that an exciting new world of food opened up to me. And since food has anyway always excited me, I took a turn in this direction. It’s all worth it for the smiles I see after guests have had a great meal.

What cuisine do you specialise in?
I used to specialise in Continental, but have now moved on to Indian and Far Eastern cuisines.

What kind of food do you prefer to eat?
I used to love everything that my mother would cook. Now, I like what my wife makes.

What inspires you in the kitchen?
Creating dishes using exotic ingredients and blending flavours in novel ways.

What is the weirdest request a guest has made to you?
I don’t consider any requests weird. If anything, a so-called weird request would be the true acid test for a chef.
